What sort of sweets? Are you eating out of boredom and the sweets are convenient or are you actively seeking them? Some would say that putting more required effort between you and what you want to prevent is a good means of preventing that which you’d rather not.

When i completely cut out sugar, i just had to grit my teeth and make my way through the first 2-3 weeks. After that it got easier. But something i’d been doing for a few months before that was to halve my sugar intake (you know, 1 spoon of sugar in tea instead of 2, etc.) You could start with that – halve the sweets you eat each day. And then work up to no sweets at all. Good luck in your effort!

I second the tip to find something else do eat/do when you usually eat sweets. I found it very helpful to have fruit and almonds available at all times and trained myself to go to the fruit basket instead of the sweets drawer when the urge hit me. And don’t beat yourself up about it, it is really a hard habit to break!

Thank you all for these advices. I should definitely find something else to eat, I think fruit (dry and fresh) could be the best. And I will try not to have any sweets at home, but it’s not easy, because my husband loves it.

Not sure if this could work for u. Basically the “junk” food is kept on the shelf at the top of our wardrobe or i get my other half/ kids to hide it. Of course i been embarrased 2 admit my self control issues – but oh well it helps me to be accountable and eat less of that stuff because its not so easy for me 2 just grab and eat! Then, sigh, after finishing a whole packet of choc biscuits i would HAVE 2 go n buy another packet, then take out same no so noone would know. Sheeesh, am glad that i am not playing this stupid game today!

I’m trying to reduce the amount of sugar I consume and discovered something about my choices that I thought might be useful to other people.

Now I’ve been very lucky in that my Mum is very sensible with food. She’s always said if she needs a snack she’d rather go for protein as sugary things can sometimes make her feel worse. Though for some reason it just didn’t seem to sink into my head.

Though today it finally did. I was after a snack but didn’t want to reach for one of my breakfast bars. Thankfully I’d got a cooked sausage sliced up in the fridge. So I grabbed that thinking that it was almost half the calories of the bar. After I’d eaten it I then thought I’d check out how much fat I’d just consumed.

What I discovered is that because I’d gone for a low fat sausage my chocolate and oat brunch bar actually had more fat than the sausage, 6g compared to 2g for the sausage, as well as more saturated fat than the sausage. It also had 12g of sugar compared to less than 1g for the sausage. The bar contained 2g of fibre compared to the 1g of fibre; I never thought I’d be grateful for fillers in sausages. Salt was almost identical. Finally the bar contained a paltry 2g of protein compared to a whopping 8g in the sausage. All for half the calories!

So now my next weeks work lunches are going to be sliced sausage with a little bit of sauce. I have two breaks at work so now I can have a sausage each break instead of a bar each break and it saves me 130 calories that I can put towards my evening meal or a nice hot chocolate. Plus there’s the added benefit of extra protein in my diet that will keep me full for longer and help my muscles heal.

Another thing I found today is that microwave fries are actually pretty great. The texture isn’t as great as normal chips. Yet for 166 calories per box with 4.2g fat, 0.7g sat fat, 2.4g fibre,0.5g sugar and 2.9g protien it’s great not having to worry about portion control or putting the oven on for just a handful of chips. Again they’re better for me than a breakfast bar. I’m actually suprised that a low fat sausage (heck even two of them) or a box of fries is better for me than a breakfast bar!

I need to get up earlier to have a proper breakfast. At the moment I’m having a shake or a breakfast bar. Then I have two breakfast bars at work. It’s the two I have at work that I’ll be replacing. Though I’m going to try baking eggs every so often to have cold in the morning. Though I’m yet to try that.

I agree that having breakfast that keeps you full is the key though. I only started eating breakfast the first time I lost weight as until then I skipped breakfast. It made such a difference having even something simple like a bowl of branflakes (that are now sadly on the “too much added sugar” list).

Please list things you have done that have really worked
to take the edge off that I, until recently, was taking off by eating sugary stuff like cakes, cookies, ice cream, etc.

What I mean by the “edge” is feelings like

…stress, drone-y ness, blahness, escapism, irritability, wanting to have fun or be festive, listlessness.

Yes, I’ve eaten fruit, acorn squash, toast, tuna, slept, walked, just felt the feelings, fruit-sweetened jam, cottage cheese, chicken, smoked cheese, lasagna, etc. Staying far away from juice as well. I’m hoping for some new ideas that might work as well as or better than the things I’ve been doing.

Looking at your list of “edges”, it looks like two sets of things…
- one looks kind of downward/depressive (blah, listless, etc.)
- the other looks kind of more on the anxiety or higher-energy end of things (stress, irritability, wanting to escape or have fun [I’d call that restlessness], etc.)

Maybe you need two kinds of remedy?

I haven’t found any miracle cures, or anything that “really works” all the time, or for everybody.

For either end of things, for me going for a walk works. Either a brisk walk, or a slow walk, depending. But you say you’ve already tried that.

Sometimes doing something creative helps. Writing, for example, or playing an instrument, or painting/drawing. I like drawing with coloured pencils or crayons or pastels. Easy, no fuss or mess (or very little mess).

For some forms of ailing mood, I love doing things that bring me a lot of great sensory input. Like art gallery, museum. Or a music concert.

Sometimes it helps to Get Stuff Done.
Or to go someplace with other people.

Another way to think of it is to ask yourself, what does my body (or body/mind, if you like that kind of lingo) want right now?

You could look at 2 dimensions….
— do I want/need to be passive (rest, relax), or active (do things, move, exercise)
— do I want/need to be stimulated/entertained, take-things-in, or to be expressive/creative.
(the latter is one of the distinctions that Julia Cameron ( The Artist’s Way ) makes, and that I’ve found helpful at times.

But you know . . .
it’s very personal and depends on all kinds of things, including all that stuff about what’s really going on under the surface.
I’m not sure that any of this, coming from me or anybody else, would really be of any help.

And I’m sorry to hear that you’re grappling with so many “edges” that need off-taking.

Mary Ann lays it all out so well! What excellent ideas and analysis.

Lately, for me, the thing I am attempting to do in my own situations “where a pound of M&Ms is the obvious choice” situations is to journal. Sometimes it ends up ‘really writing something’ but usually it’s just an outpouring of whatever is going on. I made journalling a rule a couple of months ago specifically to try and do more of this. Otherwise I don’t get around to it.

I try to identify what I’m feeling (boredom, anger, irritability, put-upon, dismissed, frightened, whatever) and write about it: what I’ve identified, how it feels, when I’ve felt that way before, and when before that, what I imagine triggered it (usually I know—that ‘under the surface’ stuff M.A. mentions) and how I can see it differently now.

Usually it comes down to one of several of my life themes (lol) and then I can either deal with it and let it go (or choose not to and do something else) or, sometimes, something in my head that comes up and gets written becomes a prompt for ‘real’ writing. A few of them have been really powerful and brought back stuff I haven’t thought about in decades.

“Then there was the night Nana shot Fred…” That’s kinda my recent ‘Whoa!’ thing. I wrote for an hour on that one, I’ll bet.

That’s my first choice for now—peeling the endless layers of the infinite onion. :-D

Which sometimes is the best way.

I really like the stream-of-consciousness kind of journalling. The kind that Julia Cameron suggests, with her “morning pages”.

For me, there’s also a good case to be made for getting up and doing something. I’ve done so much navel-gazing and inner-exploration for decades, that lately I’m more persuaded to get off that track and do something.

I have a major sweet-tooth too ;) So, am wondering, rather than having completely sugar-free days, could you modify your rule to halve or quarter(!) etc. your sugar consumption? Somehow makes more sense to me to gradually reduce the sugar than all at one go – but that’s just the way i work!!

What has worked for you in the past? What do you want to try to do to help yourself? What are your choices? Those are my questions for you. Good luck! I had a honey addiction for a while. Since I was using it to sweeten nonfat yogurt, I lied to myself and told myself it was ok. But when I was able to quit that, my whole diet improved, and my self esteem about my self control.

Sometimes I find myself craving the aromatics associated with dessert—cardamom, cloves, orange zest, etc. A well-spiced treat can soothe this, such as licorice herbal tea or cottage cheese + sprinkle of raisins + nutmeg.

Aaaaaand, here’s another one:
Get some really good natural vanilla extract,
and mix in some of that into the sweetened yogourt.

Aaaaand / or:
some really good natural almond extract/essence,
and mix that into it.

I often do BOTH vanilla and almond.
It’s very good.

Aaaaaand, it’s a great way to get some oat bran into ya.
Once you’ve done all that yummy stuff to the yogourt,
you can mix in a couple of tablespoons of oat bran,
and it doesn’t seem the least bit like eating sawdust!

Нет, виноградным соком часто подслащивают продукты для диабетиков в том числе, если в составе нет глюкозы, глюкозного сиропа и проч., то составу можно верить.

If I were doing that rule I think I’d count dried fruit (but probably not fresh) as a sweet. The only dried fruit I have on hand is a box of currants, but it has 28g sugar per serving (1/4 cup), which seems like quite a bit to me. For comparison, a can of Coke has 39g sugar.

It’s true that it’s high in sugar, but it’s sugar that comes with all the fiber and micronutrients and suchlike still intact, so it’s nowhere near as bad for one’s system as something like a candy bar made of refined sugar and chocolate, IMO.

У меня о добавленного сахара резко скачет концентрация глюкозы в крови. то есть я практически моментально хочу есть, причем катастрофически вплоть до трясущихся о голода рук и больной головы. Я такое жесткое ограничение выдвинула себе впервые, следующий раз дам себе возможность хотя бы раз в неделю что-то с сахаром есть. Но вообще отказ о сахара мне лично позволяет выстроить нормальный режим питания.

Ну скажем так: если я выпью что-то с сахаром даже после плотного обеда, есть я захочу сильно раньше. Все зависит от конкретных обстоятельств, конечно, но что-то сладкое я стараюсь есть микродозами. Тогда сильных скачков получается избежать.

Такая реакция есть в принципе у всех, это заложено физиологией, так как кровь способна переносить только определенное количество глюкозы. Если ее очень много, свойства крови изменятся (плотность, текучесь и прочее), поэтому инсулин оч быстро убирает ее в ткани. Просто у меня это выражено очень сильно.

У меня в прошлом месяце принципиально лучше выглядела кожа (это я сейчас, на контрасте, понимаю), и я похудела на килограмм где-то — и ещё практически не было отёков. Зависимость от сахара у меня тоже была, но, конечно, не такая сильная, как у Наташи. Я себя стала лучше чувствовать.

я примерно месяц почти не ем сахара и быстрых углеводов – кожа действительно стала лучше. первую неделю ломало без сахара страшно, не могла наесться просто едой, а теперь и не хочется и когда все таки ем что-то запретное – оно очень сладким кажется, слишком.

вот я читаю всё время как вы отказываетесь от сахара и тоже подумываю. от соли мне было легко отказаться, но от сахара! это же просто ужас. я так люблю сладкое, не представляю как себя заставить, хотя понимаю, что надо.

От соли, на самом деле, отказаться довольно сложно, так как ее полно во всех готовых продуктах. То есть чтобы отказаться от соли надо питаться только домашней едой, плюс свежие фрукты и овощи.

для меня еда является весьма болезненным вопросом, т.к. это моя, как бы это сказать, отрада в жизни, это то, от чего я отказываться не хочу/не буду и т.д. для меня принципиально важно, чтобы еда была вкусной, к тому же – если мне хочется чего-то здесь и сейчас – я не стану терпеть. на данный момент, я стала воспитывать свои привычки в сторону здорового питания (уже давно не ем жаренного на масле, стараюсь не есть всякие консерванты и прочие лишние компоненты, стараюсь готовить сама), но это происходит не за счёт запрета, а за счёт изменения точки зрения об этих вредных продуктах и после этого происходит отказ.

для меня не было проблемой отказаться от лишней соли (сразу и ответ Наташе: совсем от неё отказаться, конечно, невозможно. я люблю сыр, например, он без соли никак. люблю солёные огурцы, ну и т.д. но я перестала класть лишнюю соль: когда варю рис или макароны, когда жарю мясо или запекаю рыбу, в салат и т.п.), потому что я посмотрела видео на такздорово.ру и осознала, что есть лишняя соль, которая не нужна. после отказа – я стала сильнее ощущать где она лишняя (как-то раз попался дико солёный хлеб).

это я к чему – пока что я не понимаю чем мне плохо с сахаром, чем он вреден вообще, ну откладывается и откладывается там что-то куда-то. насколько я понимаю – откладывается скорее из-за жира, всяких печенье-конфет я не ем.
сахар я употребляю в виде: хороший шоколад, домашнее варенье, мороженое, натуральный мармелад.
бывает иногда, что ем всякие вафли, но это не от желания, а скорее от того, что в данный момент есть нечего, а времени идти в магазин просто нет. удовольствия от них не получаю (для меня это важно).

а поскольку сладкое я очень люблю и оно составляет весомую часть – мне сложно представить, что я возьму и откажусь от него. мне нужен веский повод. улучшение кожи мне не прельщает.)

Ну, я вешу 64 кг при росте 183 см, если бы я стала худеть ещё больше, отказавшись от сахара, я бы его ввела принудительно обратно. Главные изменения — это а) отсутствие сонливости после еды; б) отсутствие острых приступов голода; в) снятие зависимости и ломки, которая всегда дискомфортна. Думаю, человек с хоть каким-то лишним весом сбросит без сахара 2-4 кг в месяц точно, особенно если он у него присутствует в количествах.

Коллеги, большое спасибо за информацию! Меня привлекает перспектива не хотеть спать после еды (я питаюсь относительно дробно, но даже маленькие порции не спасают от получасового тупления). и я читала про гликемический индекс, но как-то к себе не относила всё это. попробую перечитать все материалы ещё раз и взглянуть на проблему с другой стороны.

A teaspoon of sugar is approximately 4.2 grams. Look at the amount of sugar you would be eating/drinking, and convert the grams into teaspoons. Example: One 20oz Dr.Pepper has 67 grams of sugar in it, so that would be like eating SIXTEEN (16) teaspoons of granulated white sugar. If you want larger measurements, there are 48 teaspoons in a cup, so that would be like eating 1/3 of a cup of sugar.

I find that breaking it down that way really shows me just how much sugar I am actually consuming/avoiding.

When I am having trouble saying no to anything (for me it is cigarettes), I actually kind of lie to myself. Like, if someone offers me something I really want in the moment but I don’t want to allow it for myself, I say “I am going to say no now and wait for this craving to pass. If it isn’t gone by X o’clock, I will let myself have it.”

Not having too much sweet stuff in the house has helped a lot. I still can’t resist if someone offers me something, but fortunately I work at home and am a general homebody, so usually it’s only the occasional treat that my husband offers me. Last month was my first “limit sugar” month, and it got easier after the first two weeks, as it became more of a habit to not eat sweets. Staying busy and physically active helps, too. When I get an urge for a snack or something sweet during the day, I go walk my dog or ride my bike to take my mind off it.

Snack on frozen blueberries (dusted w/a little cinnamon, if you like it) when a sugar craving kicks in. If you can have Agave — a touch of that is nice, too.

Something in cinnamon is supposed to help even out sugar cravings and the frozen blueberries really seem like a treat. In a sorbet sort of way.

Penghilangan warna
Ada dua metoda umum untuk menghilangkan warna dari sirup gula, keduanya mengandalkan pada teknik penyerapan melalui pemompaan cairan melalui kolom-kolom medium. Salah satunya dengan menggunakan karbon teraktivasi granular [granular activated carbon, GAC] yang mampu menghilangkan hampir seluruh zat warna. GAC merupakan cara modern setingkat “bone char”, sebuah granula karbon yang terbuat dari tulang-tulang hewan.

Karbon pada saat ini terbuat dari pengolahan karbon mineral yang diolah secara khusus untuk menghasilkan granula yang tidak hanya sangat aktif tetapi juga sangat kuat. Karbon dibuat dalam sebuah oven panas dimana warna akan terbakar keluar dari karbon.

Cara yang lain adalah dengan menggunakan resin penukar ion yang menghilangkan lebih sedikit warna daripada GAC tetapi juga menghilangkan beberapa garam yang ada. Resin dibuat secara kimiawi yang meningkatkan jumlah cairan yang tidak diharapkan.

Cairan jernih dan hampir tak berwarna ini selanjutnya siap untuk dikristalisasi kecuali jika jumlahnya sangat sedikit dibandingkan dengan konsumsi energi optimum di dalam pemurnian. Oleh karenanya cairan tersebut diuapkan sebelum diolah di panci kristalisasi.

Pendidihan

Penyimpanan
Gula kasar yang dihasilkan akan membentuk gunungan coklat lengket selama penyimpanan dan terlihat lebih menyerupai gula coklat lunak yang sering dijumpai di dapur-dapur rumah tangga. Gula ini sebenarnya sudah dapat digunakan, tetapi karena kotor dalam penyimpanan dan memiliki rasa yang berbeda maka gula ini biasanya tidak diinginkan orang. Oleh karena itu gula kasar biasanya dimurnikan lebih lanjut ketika sampai di negara pengguna.

Afinasi (Affination)
Tahap pertama pemurnian gula yang masih kasar adalah pelunakan dan pembersihan lapisan cairan induk yang melapisi permukaan kristal dengan proses yang dinamakan dengan “afinasi”. Gula kasar dicampur dengan sirup kental (konsentrat) hangat dengan kemurnian sedikit lebih tinggi dibandingkan lapisan sirup sehingga tidak akan melarutkan kristal, tetapi hanya sekeliling cairan (coklat). Campuran hasil (‘magma’) di-sentrifugasi untuk memisahkan kristal dari sirup sehingga kotoran dapat dipisahkan dari gula dan dihasilkan kristal yang siap untuk dilarutkan sebelum proses karbonatasi.

Cairan yang dihasilkan dari pelarutan kristal yang telah dicuci mengandung berbagai zat warna, partikel-partikel halus, gum dan resin dan substansi bukan gula lainnya. Bahan-bahan ini semua dikeluarkan dari proses.

Karbonatasi
Tahap pertama pengolahan cairan (liquor) gula berikutnya bertujuan untuk membersihkan cairan dari berbagai padatan yang menyebabkan cairan gula keruh. Pada tahap ini beberapa komponen warna juga akan ikut hilang.

Salah satu dari dua teknik pengolahan umum dinamakan dengan karbonatasi. Karbonatasi dapat diperoleh dengan menambahkan kapur/ lime [kalsium hidroksida, Ca(OH)2] ke dalam cairan dan mengalirkan gelembung gas karbondioksida ke dalam campuran tersebut.

Gas karbondioksida ini akan bereaksi dengan lime membentuk partikel-partikel kristal halus berupa kalsium karbonat yang menggabungkan berbagai padatan supaya mudah untuk dipisahkan. Supaya gabungan-gabungan padatan tersebut stabil, perlu dilakukan pengawasan yang ketat terhadap kondisi-kondisi reaksi.

Gumpalan-gumpalan yang terbentuk tersebut akan mengumpulkan sebanyak mungkin materi-materi non gula, sehingga dengan menyaring kapur keluar maka substansi-substansi non gula ini dapat juga ikut dikeluarkan. Setelah proses ini dilakukan, cairan gula siap untuk proses selanjutnya berupa penghilangan warna.

Selain karbonatasi, t eknik yang lain berupa fosfatasi. Secara kimiawi teknik ini sama dengan karbonatasi tetapi yang terjadi adalah pembentukan fosfat dan bukan karbonat. Fosfatasi merupakan proses yang sedikit lebih kompleks, dan dapat dicapai dengan menambahkan asam fosfat ke cairan setelah liming seperti yang sudah dijelaskan di atas.

Persiapan bahan baku pembuatan gula tebu
Tebu adalah tanaman yang ditanam untuk bahan baku gula. Tebu ini termasuk jenis rumput-rumputan. Tanaman tebu dapat tumbuh hingga 3 meter di kawasan yang mendukung. Umur tanaman sejak ditanam sampai bisa dipanen mencapai kurang lebih 1 tahun.

Tebu dapat dipanen dengan cara manual atau menggunakan mesin-mesin pemotong tebu. Daun kemudian dipisahkan dari batang tebu, kemudian baru dibawa kepabrik untuk diproses menjadi gula.

Tahapan-tahapan dalam proses pembuatan gula dimulai dari penanaman tebu, proses ektrasi, pembersihan kotoran, penguapan, kritalisasi, afinasi, karbonasi, penghilangan warna, dan sampai proses pengepakan sehingga sampai ketangan konsumen.

Ekstraksi
Tahap pertama pembuatan gula tebu adalah ekstraksi jus atau sari tebu. Caranya dengan menghancurkan tebu dengan mesin penggiling untuk memisahkan ampas tebu dengan cairannya. Cairan tebu kemudian dipanaskan dengan boiler. Jus yang dihasilkan masih berupa cairan yang kotor: sisa-sisa tanah dari lahan, serat-serat berukuran kecil dan ekstrak dari daun dan kulit tanaman, semuanya bercampur di dalam gula.

Jus dari hasil ekstraksi mengandung sekitar 50 % air, 15% gula dan serat residu, dinamakan bagasse, yang mengandung 1 hingga 2% gula. Dan juga kotoran seperti pasir dan batu-batu kecil dari lahan yang disebut sebagai “abu”.

Pengendapan kotoran dengan kapur (Liming)
Jus tebu dibersihkan dengan menggunakan semacam kapur (slaked lime) yang akan mengendapkan sebanyak mungkin kotoran , kemudian kotoran ini dapat dikirim kembali ke lahan. Proses ini dinamakan liming.

Jus hasil ekstraksi dipanaskan sebelum dilakukan liming untuk mengoptimalkan proses penjernihan. Kapur berupa kalsium hidroksida atau Ca(OH)2 dicampurkan ke dalam jus dengan perbandingan yang diinginkan dan jus yang sudah diberi kapur ini kemudian dimasukkan ke dalam tangki pengendap gravitasi: sebuah tangki penjernih (clarifier). Jus mengalir melalui clarifier dengan kelajuan yang rendah sehingga padatan dapat mengendap dan jus yang keluar merupakan jus yang jernih.

Kotoran berupa lumpur dari clarifier masih mengandung sejumlah gula sehingga biasanya dilakukan penyaringan dalam penyaring vakum putar (rotasi) dimana jus residu diekstraksi dan lumpur tersebut dapat dibersihkan sebelum dikeluarkan, dan hasilnya berupa cairan yang manis. Jus dan cairan manis ini kemudian dikembalikan ke proses.

Penguapan (Evaporasi)
Setelah mengalami proses liming, proses evaporasi dilakukan untuk mengentalkan jus menjadi sirup dengan cara menguapkan air menggunakan uap panas (steam). Terkadang sirup dibersihkan lagi tetapi lebih sering langsung menuju ke tahap pembuatan kristal tanpa adanya pembersihan lagi.

Jus yang sudah jernih mungkin hanya mengandung 15% gula tetapi cairan (liquor) gula jenuh (yaitu cairan yang diperlukan dalam proses kristalisasi) memiliki kandungan gula hingga 80%. Evaporasi dalam ‘evaporator majemuk’ (multiple effect evaporator) yang dipanaskan dengan steam merupakan cara yang terbaik untuk bisa mendapatkan kondisi mendekati kejenuhan (saturasi).

Pendidihan/ Kristalisasi
Pada tahap akhir pengolahan, sirup ditempatkan ke dalam wadah yang sangat besar untuk dididihkan. Di dalam wadah ini air diuapkan sehingga kondisi untuk pertumbuhan kristal gula tercapai. Pembentukan kristal diawali dengan mencampurkan sejumlah kristal ke dalam sirup. Sekali kristal terbentuk, kristal campur yang dihasilkan dan larutan induk (mother liquor) diputar di dalam alat sentrifugasi untuk memisahkan keduanya, bisa diumpamakan seperti pada proses mencuci dengan menggunakan pengering berputar. Kristal-kristal tersebut kemudian dikeringkan dengan udara panas sebelum disimpan.

Larutan induk hasil pemisahan dengan sentrifugasi masih mengandung sejumlah gula sehingga biasanya kristalisasi diulang beberapa kali. Sayangnya, materi-materi non gula yang ada di dalamnya dapat menghambat kristalisasi. Hal ini terutama terjadi karena keberadaan gula-gula lain seperti glukosa dan fruktosa yang merupakan hasil pecahan sukrosa. Olah karena itu, tahapan-tahapan berikutnya menjadi semakin sulit, sampai kemudian sampai pada suatu tahap di mana kristalisasi tidak mungkin lagi dilanjutkan.

Sebagai tambahan, karena gula dalam jus tidak dapat diekstrak semuanya, maka terbuatlah produk samping (byproduct) yang manis: molasses. Produk ini biasanya diolah lebih lanjut menjadi pakan ternak atau ke industri penyulingan untuk dibuat alkohol (etanol) . Belakangan ini molases dari tebu di olah menjadi bahan energi alternatif dengan meningkatkan kandungan etanol sampai 99,5%.
