Last month, kaizenkaren commented on my post about the low-carb Cheesy Mashed Cauliflower Puffs I had made for dinner. I hope I said Cauliflower and not Potato, because they are a potato substitute. I found the link for the recipe, but the month has turned to April and I didn’t think it would show on the game wall if I commented on it back in March.

So here it is. I made them in normal muffin tins — but now I’ve seen this picture with square muffin tins, I’m feeling very out of touch with what “muffins” are supposed to look like. Hankering for a square muffin tin. A lot.

Himself loved these. He has completely gone off potatoes now that I’ve found 101 things to do with cauliflower—and his blood sugar loves it. It’s also a good way to eat veggies if you don’t like veggies.

The next morning—a weekend morning—I flattened the leftovers between two sheets of parchment (carefully) and fried them like hash browns. Sorta like hash browns—emphasis on the “sorta”. They were a little delicate but we both enjoyed them and if felt like an indulgence. But wasn’t.

Great one there. I love cauliflowers and they’re great with anything. I’ve seen these cauliflower-based pizza crust recipe lying around and it looks absolutely delicious. Try this out.

Thanks, crazy shoots—I will! Hubby loves pizza but has essentially given it up. He’s not. “Crust less” guy. I also saw a recipe referenced once for “rice” made with cauliflower. This reminds me I ought to go find that recipe.

I now get no-carb noodles made with “konnyaku” (similar to sukiyaki noodles) and, while they are a fuss to drain, soak, etc (the liquid they are packed in has a fishy smell until you soak or dry fry them) they are zero carbs and zero calories (all fibre) and even work as “spaghetti”.

Ahhh, I love koniyaku too! They are good with thick sauce. I can soak them in pasta sauce all day and it never gets soggy. Also, the taste is great once the sauce have soaked through! :)

Best form to eat greens in is raw. As it is hard to consume it as such, blend it into a smoothie with some of your favorite fruit.

Sure thing, Shawn! :-) It’s more like a stir fry than steaming the greens. The greens that i use cook really quickly, so it’s enough to gently stir fry them. It actually takes much more time to chop them up than to cook them!

Take a little oil in a frying pan – i use sesame oil, but you could use whatever you have, or maybe a little butter?

Warm the oil and then add some cumin seeds, give a few seconds until you get a nice smell.

Add half a dried red chilli (if you have it) to the oil and wait until it browns.

Next, you add the finely cut greens, salt to taste and turmeric powder.

Toss these together until the greens shrivel. And yummy greens are ready :-)

People in these parts like to add cloves of crushed garlic and some grated coconut in the oil, along with the cumin seeds. Entirely optional. My recipe, too, tends to change from day to day! I’m sure you’ll come up with your own variants – yum!

Hello everyone. I am not sure, but when you think on greens, are vegetables like onions, carrots or tomatoes included?

Just looked up the definition (I am not a native English speaker) but it seems I should not include those non-green vegetables.

Greens refers to the leafy vegetables, i think? You know, leaves eaten as vegetables, such as spinach and lettuce.

Yes, that is what I would say, too. Other choices might be kale, beet greens (the leaves), chard, etc. There is a rule for brightly colored vegetables that I use for the others like corn, carrots, peas, beans, tomatoes, etc.

Yes, greens are the leafy parts.

BUT I would also say that if you chose that rule (“Eat greens”) with the intention of including various other vegetables, then I would go with your intention —
in other words, the important thing is not the definition in the dictionary — the important thing is: what is it that you want that rule to mean, as it applies to your own life and what you want to be doing in your life.

I don’t remember exactly what I was thinking when I choose that rule, but I will follow the beet greens definition (I tend to follow strictly rules like the dictionary).

Thanks for your answers. I bought a lettuce yesterday, but I realized I had no chlorine to clean it. Today is the day! :-)

I have found that it’s so much easier to eat my veggies when I wash and prep them before time. I hate that part, so I do it soon after I buy the veg, then all I have to do is cook/steam/eat them when the time comes.

Hi everyone,
Would you share some great vegetable juice recipes with me? We got a juicer a while ago and only using it 2-3 times a month. I think that this is not justifying the investment and I also would like to drink more veggie juices. My problem is that the veggies I love (cucumber, pepper, carrots, tomatoes, salad, spinach, celery) I would always prefer eating them whole. And the once that I am not that fond about (kale, swiss chard, pumpkins, root celery) and would like to prepare in a way I like them – these ones are not improving by juicing them! And I do not want to juice 8apple with one handful of kale as all the fruit sugar without fiber would not justify the added handful of kale. Do you know what I mean.

So I am in search for great veggie juices as I am sure that I am not at the end with the juicer. Just starting actually. I am grateful for every tip.

A couple spoonfuls of plain greek yogurt can transform a salad for me, without resorting to less-healthy dressings like ranch. I often add Tapatio or another hot sauce also. I also missed out last week on my wife’s first attempt at Kale chips – basically Kale dressed and then baked until crispy. Even my son loved them, and I can’t remember the last time he voluntarily ate something green.

lol idk if I could make kale chips without killing everything. My mom made a really good kale juice once and I wish I knew how to do it. I have a ton of swiss chard too…idk if it would work in the same way.

Celery, carrot, beet, white radish. Everything to chop on small cubes, to fill with olive oil. It is possible to add salt.

1-2 apples, banana (or mango), lettuce, babyspinach,a bit of ginger, parsley/basil/coriander/mint – my favourite one! ;-) Also great, and even more spicy: add a celery stick!

You shuoldn’t write that down but make one & try it right away, and I tell you you won’t forget because it’s REALLY GOOD ;-)

Hehe, you are so right. Writing it down, as I need to get the incredients at the market! But then you are so right – doing it straight away. This morning I had: kale (took me ages to figure out that this is Gruenkohl in German ;-)! which I never ate as I found it so oldfashion.
So kale, baby spinach, 2bananas, blueberries and an apple. Yummy!

There’s a mother earth dip, I can’t recall who makes it, that’s made with vegetables and low fat, low sodium, natural cream cheese. Dip veggies IN veggies :)

A delicious smoothie to use greens is: take a bunch of parsley, a ripe mango, 2 cups water, half a lemon and some chipped ices and blend until smooth. Very energizing & healthy, tastes like a summer morning!

For those of you who want to keep greens in your diet but can’t handle their taste or texture, consider tossing them in the blender to make a puree. This works great for soups (e.g., chop and cook two sweet potatoes, a carrot, an onion and a fistful of kale in a pot of boiling water or vegetable broth for a half hour (I usually use about 6 cups of liquid), then puree the whole mess with a tablespoon of olive oil and some salt and pepper). Hidden greens, problem solved!

If you have a rule about eating greens, I have a great trick. Being a single girl it’s hard for me to use all of the vegetables necessary to make a delicious salad without everything spoiling before the end of the week, so if your grocery store has a decent salad bar, stock up on all of your favorite veggies and lettuce. You will get just the right amount for the week and don’t have to worry about any cutting, storing, etc.

I bought Bolthouse Farms Organic 100% Carrot Juice from Costco the other day. I usually love their other drinks (like Chai Tea mmm) but when I saw they had carrot juice, and there were 8 servings of veggies per bottle, I had to buy some and tell myself to drink a third of a bottle a day. I thought this would be a good way to force a good amount of veggies into my day if for whatever reason I am unable to when I have my meals.

32oz bottles. I think it was 3 bottles at Costco for like…$6? Fresh Carrot juice from Jamba juice is a good way to go as well. But its more like 18oz for $2 or something…dunno.

Yeah, I’d definitely cap it at a quarter to a third of a bottle per day, since the calories and sugars add up fast in juices. Thanks for the info :)

Your right. 14g of sugar. Don’t need that many servings a day. Didn’t even think about it. Why is juice – even veggie juice – so sugary? Is there really that much sugar in raw carrots?

Yes, there is that much sugar in raw carrots and when juiced you loose the advantage of much of the fiber which counteracts sugars and fats in the diet.
Munch raw carrots! I love them. (plus, chewing starts the digestive process.) ;^ )
